RedQ, How long have you been eating this way?
Could you please post your most recent blood test results?(cholesterol in particular).
Are you on any medication?

At least 5 years, probably more.

I had a check up this month with blood tests.

The Doc didn't measure cholesterol because my results were so good last time. Six months ago, I had 200 total cholesterol but my HDL had been so high that all the ratios were well into the "very good" range. Elevated HDL is typical of low carb. Low carb does not cause elevated cholesterol. In fact it normalizes it.

As noted above, my triglycerides were very low.

All other blood tests were normal. My A1C was in the normal range. I presume I had slightly elevated ketones (did 6 months ago), but because the cholesterol panel was dropped, it wasn't measured this time.

RedQ, do you have any recommendations for keto recipe websites or keto sites in general (aside from netrition)? I'm going to give it a shot, but I know in the past the lack of variety (I'm not very creative when it comes to preparing food generally...) killed the momentum after a week or so, and I want to try and keep things a bit more interesting this time around.

Well... deep topic.

When I started I ate a lot of steak. Now, I've had a Porterhouse in the freezer for a month.

I prefer dishes with a lot of cheese. I use low carb tortillas to make enchiladas and like stuffed green peppers a lot. Salads with creamy caesar dressing with nuts and blue cheese plus or minus steak or chicken is always good. Last night I had hamburger stroganoff over low carb noodles. Very good. I also have a pellet smoker which is great for ribs (after I learned how to do it.)

I've got a big binder of recipes. Most recipes just come off the internet. For instance chicken parmesan.

Insider tip: Get Hunt's no sugar tomato sauce from netrition. Also, Walmart's brand pizza sauce is pretty low carb. Did I mention making low carb pizza?

If you want 'breading' most recipes use almond flour or ground pork rinds. I sometimes use carbquik flour. Carbquik makes pretty good pancakes with low carb Mrs. Butterworth syrup.

There are lots of low carb deserts, but I almost never make them. Cheese cake is good. Heavy cream with berries or in a low carb smoothie is always good. Tastes like very good melted ice cream.

The main change in my eating habits is that I don't eat that much. It's around 2:30 now and I haven't eaten today (a swallow of heavy cream with vits around noon.) I'll probably eat the left-over Stroganoff tonight (over low carb noodles again), and brats (wrapped in low carb tortillas) tomorrow. Friday I'll get walleye fish fries from the local tavern (just the fish, tartar sauce and coleslaw --hold the starch). It has a light breading on it, but what the hell.

As for drinking, look up the 'drinking man's diet' for fun. It was developed in like the 60's (pre-Atkins) and it's basically low carb with a bunch of booze. Miller Lite is the best choice for beer - a fine Pilsner with only about 3 carbs. One or two won't hurt you once your in ketosis. I like red wine a lot, but don't drink it very often. Distilled liquor is funny stuff. If you drink it without carbs, it's fine, but with carbs it converts to sugar (I think that's how it works.) I drink cheap vodka or expensive scotch/Irish Whiskey.

It takes a while to learn how to eat low carb (metabolism has to adjust a bit). Don't think of it as sacrifice, just the way you live. Eventually (shortly) it's easy. Of course, it's a lot of cooking from scratch.

One day in and so far I'm loving it. I imagine I'll start craving carbs at some point, but right now I feel like I could do this forever. One thing comes to mind though - Every other week or so I go with my father to a local barbecue joint. It is one of his favorite restaurants, and I wouldn't want to stop going but I also can't imagine eating a big plate of barbecue pork without a sauce of some kind. I know regular barbecue sauce is loaded with sugar, so what would you suggest as a replacement? Are there any specific keto barbecue sauces (or other sauces that would go well with barbecue pork) that you would recommend?

I hope you don't mind me picking your brain about this stuff, I don't know anyone else who has made a keto diet a proper lifestyle change as opposed to a short term diet.

Netrition is your friend. Take some Geo. Hughes or (can't think of the name now). Excellent LC BBQ sauces. You won't know the difference.

Thanks to seeing vids like that in the OP, My first red meat in some time (I've stuck to chicken and fish and nuts and fruit for years, mostly) was last Sunday. De-licious, fat-laced boneless rib-eye.

Right on the Fat, Doc. Ketonaughts shoot for a large majority of calories from fat (up to 80%). That's harder than it sounds. A well marbled rib-eye is an excellent choice. I cook all my steaks sous vide.

Fat satiates the appetite. That's why ketonaughts actually consume less calories, and you can eat as much as you want.

Heavy/whipping cream is very helpful. Lots of fat and it tastes good with flavoring, or in a latte.
